  • Cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes using an electric mixer.
  • Add the pure vanilla extract to the butter and sugar mixture, mixing until combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.
  • Using a cookie scoop or your hands, portion out the dough into small balls, about one inch in diameter, and place them onto a parchment-lined baking sheet.
  • Chill the dough balls in the refrigerator for at least 30 minutes.
  • In a microwave-safe bowl, combine the semi-sweet chocolate and coconut oil (if using). Heat in 30-second intervals, stirring in between, until fully melted and smooth.
  • Dip each chilled dough ball into the melted chocolate, ensuring they are completely coated, and allow excess chocolate to drip off.
