Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add chopped onion and bell pepper, sauté for about 5 minutes until softened.
  • Add shredded chicken, garlic powder, ground cumin, salt, and pepper. Stir and cook for 3-4 minutes until heated through.
  • Remove from heat. On a tortilla, sprinkle cheese on one half, add chicken mixture, and top with more cheese.
  • Fold the tortilla in half and repeat with remaining tortillas.
  • In the skillet, add more olive oil if needed. Cook one quesadilla for 3-4 minutes on each side until golden brown and crispy.
  • Remove from skillet, let cool for a minute, then cut into wedges. Repeat with remaining quesadillas.
  • Serve warm, garnished with cilantro and alongside guacamole and salsa.

Notes

For variations, consider adding black beans, corn, or spicy cheeses. You can also make it vegetarian by using sautéed vegetables.
