Filling Ingredients

  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 1 cup shredded cheese A blend of cheddar and Monterey Jack is recommended.
  • 1 cup enchilada sauce Store-bought or homemade can be used.
  • 8 medium flour tortillas Flour tortillas are ideal for rolling.
  • 1/2 cup cream cheese, softened Adds a rich, creamy texture.
  • 1 teaspoon taco seasoning Adds extra flavor to the chicken.
  • 1/4 cup chopped green onions Adds color and mild onion flavor.
  • 1/4 cup chopped cilantro Optional for added freshness.
  • 1/2 teaspoon garlic powder Enhances overall flavor.
  • to taste salt and pepper Essential for seasoning.

Instructions
 

  • In a large mixing bowl, combine the shredded chicken, softened cream cheese, 1/2 cup of shredded cheese, taco seasoning, garlic powder, salt, pepper, green onions, and cilantro (if using). Mix well until all ingredients are evenly incorporated.
  • Warm the flour tortillas slightly in a skillet over low heat for about 20-30 seconds on each side, or microwave them for about 15 seconds.
  • Lay a tortilla flat on a clean surface. Spoon about 1/4 cup of the chicken filling onto the center of the tortilla. Spread it out evenly, leaving a little space at the edges. Carefully roll the tortilla tightly from one end to the other.
  • Continue assembling the roll-ups with the remaining tortillas and filling until all ingredients are used.
  • Preheat your oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Arrange the rolled tortillas seam-side down in the prepared baking dish. Pour the remaining enchilada sauce over the top of the roll-ups.
  • Sprinkle the remaining shredded cheese over the sauce.
  • Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
  • Once baked, let it cool for a few minutes. Garnish with extra chopped cilantro or green onions, if desired. Serve warm.

Notes

These roll-ups can be customized with various ingredients, and leftovers can be stored in an airtight container for up to three days.
