Instructions
In a large mixing bowl, combine the shredded chicken, softened cream cheese, 1/2 cup of shredded cheese, taco seasoning, garlic powder, salt, pepper, green onions, and cilantro (if using). Mix well until all ingredients are evenly incorporated.
Warm the flour tortillas slightly in a skillet over low heat for about 20-30 seconds on each side, or microwave them for about 15 seconds.
Lay a tortilla flat on a clean surface. Spoon about 1/4 cup of the chicken filling onto the center of the tortilla. Spread it out evenly, leaving a little space at the edges. Carefully roll the tortilla tightly from one end to the other.
Continue assembling the roll-ups with the remaining tortillas and filling until all ingredients are used.
Preheat your oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish.
Arrange the rolled tortillas seam-side down in the prepared baking dish. Pour the remaining enchilada sauce over the top of the roll-ups.
Sprinkle the remaining shredded cheese over the sauce.
Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
Once baked, let it cool for a few minutes. Garnish with extra chopped cilantro or green onions, if desired. Serve warm.
