  • 1 cup bell peppers (mixed colors, julienned)
  • 1 cup cabbage (shredded, green or Napa)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced or grated
  • 3 green onions, chopped (white and green parts separated)
  • 3 tablespoons soy sauce (low sodium recommended)
  • 1 tablespoon oyster sauce (optional, for added depth of flavor)
  • 1 teaspoon sesame oil (for finishing)
  • Salt and pepper to taste

Instructions
 

  • 1. Start by preparing the chow mein noodles. If using dried noodles, follow the instructions on the package to cook them until al dente. Once cooked, drain and rinse with cold water to stop the cooking process, then set aside.
  • 2. In a large wok or a non-stick skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Ensure the oil is hot but not smoking, as this is crucial for a good stir-fry.
  • 3. Add the sliced chicken breast to the wok in a single layer. Let it sear without moving for about 2-3 minutes until it develops a golden-brown color. Flip the chicken pieces and cook for another 2-3 minutes until fully cooked through. Remove the chicken from the wok and set aside.
  • 4. In the same wok, add a touch more oil if needed, then toss in the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.
  • 5. Add the shredded carrots, bell peppers, and cabbage to the wok. Stir-fry the vegetables for about 3-4 minutes until they start to soften but still retain their crunch. You want them vibrant and colorful, not overcooked.
  • 6. Return the cooked chicken to the wok, mixing it with the vegetables. Add the cooked chow mein noodles, tossing everything together gently to combine.
  • 7. Pour in the soy sauce, oyster sauce (if using), and sprinkle with salt and pepper to taste. Stir-fry for an additional 2-3 minutes, ensuring the sauce evenly coats the noodles and ingredients.
  • 8. Finally, drizzle the sesame oil over the dish and add the white parts of the chopped green onions. Give it one last toss to incorporate the flavors.
  • 9. Remove the wok from heat, garnish with the green parts of the green onions, and serve immediately, enjoying your homemade Chicken Chow Mein!
