Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line an 8-inch square baking dish with parchment paper.
  • In a large mixing bowl, combine rolled oats, chopped nuts, dried fruits, cinnamon, and salt.
  • In a separate bowl, mix together nut butter and honey (or maple syrup) until smooth.
  • Stir in the vanilla extract into the wet mixture.
  • Pour the wet mixture over the dry ingredients and mix until well combined.
  • Transfer the mixture to the prepared baking dish and press down firmly.
  • Bake for 20-25 minutes or until the edges are golden brown.
  • Allow to cool completely before cutting into bars.
  • Store in an airtight container at room temperature for up to one week.
