Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
Cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing on low speed until just combined.
Gently fold in the chocolate chips and chopped cherries using a spatula.
Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden but the centers still appear soft.
Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
