Instructions
 

  • 1. Prepare the flank steak by slicing it horizontally to create a pocket.
  • 2. Season the flank steak with salt and pepper, rubbing it into the meat.
  • 3. In a skillet, heat 1 tablespoon of olive oil and sauté the onion for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
  • 4. Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool.
  • 5. In a mixing bowl, combine the sautéed mixture with mozzarella and cream cheese, and Italian seasoning.
  • 6. Spoon the cheese mixture into the flank steak pocket and secure with cooking twine.
  • 7. Preheat the oven to 375°F (190°C). Sear the stuffed steak in an oven-safe skillet for 3-4 minutes on each side.
  • 8. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 145°F (63°C).
  • 9. Let the steak rest for 10 minutes before slicing and serving.
