Instructions
Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and stir for about 30 seconds until aromatic.
Add chopped mushrooms and cook for 5-7 minutes, seasoning with salt and pepper.
Remove from heat and let cool slightly before adding cheese.
In a mixing bowl, combine the mushroom mixture with shredded cheese and fresh herbs if using.
Roll out the puff pastry on a floured surface to about ¼ inch thick.
Cut the pastry into 10x10 cm squares.
Place a spoonful of filling in the center of each square, fold over to form a triangle, and seal the edges.
Transfer to a baking sheet lined with parchment paper and brush the tops with beaten egg.
Bake for 20-25 minutes until golden brown and puffed.
Let cool for a few minutes before serving.
Notes
These pastries can be served warm with marinara or garlic aioli for dipping. They can also be stored in the refrigerator for up to three days.
