  • 4 cups Cooked Chicken Breast, shredded Boneless and skinless, cooked until tender.
  • 2 cups Salsa Use your favorite mild or spicy salsa.
  • 2 cups Shredded Cheddar Cheese For a creamy and rich topping.
  • 8 ounces Cream Cheese Softened for easy mixing.
  • 1 can Black Beans 15 ounces, drained and rinsed.
  • 1 cup Frozen Corn Thawed before adding.
  • 1 bunch Green Onions Chopped for garnish.
  • 1 cup Tortilla Chips Crushed for serving.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, salsa, cream cheese, black beans, and corn. Mix thoroughly.
  • Taste the mixture and adjust seasoning if necessary.
  • Spread half of the chicken mixture into a greased 9x13 inch baking dish.
  • Sprinkle one cup of shredded cheddar cheese over the first layer.
  • Spread the remaining chicken mixture over the cheese layer.
  • Top with the remaining cup of shredded cheddar cheese.
  • Bake for 25-30 minutes until the cheese is bubbling and slightly golden.
  • Allow to cool for 5-10 minutes before serving.
  • Garnish with chopped green onions and serve with crushed tortilla chips.

Notes

This casserole can be customized with additional spices or vegetables to suit your taste.
