Instructions
 

  • 1. Prepare the potatoes: Wash and peel the potatoes. Cut into small cubes and boil in salted water.
  • 2. Cook the potatoes: Simmer for 15-20 minutes until fork-tender. Drain and return to pot.
  • 3. Mash the potatoes: Mash until smooth and creamy.

  • 5. Warm tortillas: Heat each tortilla in a skillet for 30 seconds on each side.
  • 6. Fill tortillas: Place a scoop of filling in the center of each tortilla.
  • 7. Fold burritos: Fold in sides and roll tightly.
  • 8. Cook burritos: Heat olive oil in skillet and cook burritos seam-side down until golden brown.
