Instructions
In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Whisk until mixed.
Gradually add warm water and olive oil. Stir until the dough comes together.
Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise for 30-45 minutes.
Preheat the oven to 375°F (190°C). Punch down the risen dough.
Roll out the dough into a rectangle and cut into 3-4 inch squares.
Place cheese and pepperoni in the center of each square, fold corners to seal.
Place on a baking sheet lined with parchment paper, seam side down.
Brush with olive oil and sprinkle with seasoning if desired.
Bake for 15-20 minutes until golden brown and cheese is bubbling.
Let cool slightly before serving with marinara sauce.
Notes
Store leftovers in an airtight container for up to three days. Can freeze before or after baking.
