Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the russet potatoes thoroughly and pat them dry.
  • Cut each potato into wedges.
  • In a large mixing bowl, combine the potato wedges with olive oil, garlic powder, paprika, salt, and black pepper. Toss until evenly coated.
  • Arrange the seasoned wedges in a single layer on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  • While the wedges are baking, prepare your chili if making from scratch.
  • Once the wedges are crispy, remove them from the oven and sprinkle the cheeses over the top.
  • Return to the oven for an additional 5-7 minutes until the cheese is melted.
  • Top with warm chili and sliced green onions.
  • Serve with a dollop of sour cream if desired.
