Instructions
Preheat your oven to 425°F (220°C).
Wash and scrub the russet potatoes thoroughly and pat them dry.
Cut each potato into wedges.
In a large mixing bowl, combine the potato wedges with olive oil, garlic powder, paprika, salt, and black pepper. Toss until evenly coated.
Arrange the seasoned wedges in a single layer on a baking sheet lined with parchment paper.
Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
While the wedges are baking, prepare your chili if making from scratch.
Once the wedges are crispy, remove them from the oven and sprinkle the cheeses over the top.
Return to the oven for an additional 5-7 minutes until the cheese is melted.
Top with warm chili and sliced green onions.
Serve with a dollop of sour cream if desired.
