Instructions
 

  • Prepare your ingredients by chopping the onion, bell pepper, celery, and garlic.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes until softened.
  • Add the minced garlic and sauté for an additional minute until fragrant.
  • Stir in the Cajun seasoning, smoked paprika, and cayenne pepper. Toast the spices in the oil for about 30 seconds.
  • Add the orzo pasta, stirring to coat it in the spices and vegetable mixture.
  • Pour in the vegetable broth, diced tomatoes, and corn. Stir to ensure the orzo is submerged.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 10-12 minutes.
  • Check the orzo for doneness. It should be tender and have absorbed most of the liquid. Cook longer if necessary.
  • Remove from heat, fluff with a fork, and season with salt and pepper to taste.
  • Garnish with chopped green onions before serving.
