Instructions
Prepare your ingredients by chopping the onion, bell pepper, celery, and garlic.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes until softened.
Add the minced garlic and sauté for an additional minute until fragrant.
Stir in the Cajun seasoning, smoked paprika, and cayenne pepper. Toast the spices in the oil for about 30 seconds.
Add the orzo pasta, stirring to coat it in the spices and vegetable mixture.
Pour in the vegetable broth, diced tomatoes, and corn. Stir to ensure the orzo is submerged.
Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 10-12 minutes.
Check the orzo for doneness. It should be tender and have absorbed most of the liquid. Cook longer if necessary.
Remove from heat, fluff with a fork, and season with salt and pepper to taste.
Garnish with chopped green onions before serving.
