Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking soda, salt, and cinnamon. Stir until well-mixed.
  • In a separate bowl, mix together the peanut butter and honey or maple syrup until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined.
  • Fold in the chopped nuts, dried fruits, chocolate chips, and shredded coconut.
  • Scoop out tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each cookie slightly with the back of a spoon.
  • Bake for 12-15 minutes or until lightly golden around the edges.
  • Let them cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  • Enjoy immediately or store in an airtight container for up to a week.
