Mushroom Gravy
8ouncesMushroomsFresh cremini or button mushrooms.
1tablespoonAll-purpose flourTo thicken the gravy.
2cupsBeef brothHigh quality, homemade or store-bought.

Instructions
In a large mixing bowl, combine ground beef, breadcrumbs, grated onion, egg, Worcestershire sauce, salt, and pepper. Mix gently and form into four patties.
Heat olive oil in a skillet over medium-high heat. Sear patties for 4-5 minutes on each side until golden brown. Remove and set aside.
Add sliced mushrooms to the skillet and sauté until golden brown, about 5-7 minutes.
Sprinkle flour over mushrooms and stir. Gradually add beef broth, stirring to prevent lumps. Allow to thicken.
Add soy sauce and thyme to the gravy, simmer for 2-3 minutes. Adjust seasoning with salt and pepper.
Return patties to the skillet, cover, and simmer in gravy for 5-10 minutes.
Serve patties topped with mushroom gravy and garnish with parsley.
