Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  • Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
  • In another bowl, combine the blueberries, lemon juice, and cornstarch. Toss gently to coat.
  • Divide the cookie dough in half and press half into the bottom of the prepared baking dish.
  • Spread the blueberry mixture evenly over the cookie base.
  • Crumble the remaining cookie dough over the top of the blueberry layer.
  • Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  • Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  • Cut into squares and dust with powdered sugar if desired. Serve and enjoy!

Notes

Serve warm with ice cream or at room temperature with powdered sugar for an elegant finish.
