Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
In another bowl, combine the blueberries, lemon juice, and cornstarch. Toss gently to coat.
Divide the cookie dough in half and press half into the bottom of the prepared baking dish.
Spread the blueberry mixture evenly over the cookie base.
Crumble the remaining cookie dough over the top of the blueberry layer.
Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Cut into squares and dust with powdered sugar if desired. Serve and enjoy!
Notes
Serve warm with ice cream or at room temperature with powdered sugar for an elegant finish.
