Instructions
Preheat your oven to 400°F (200°C).
Unroll the thawed puff pastry on a lightly floured surface and roll it out to about 1/8-inch thickness.
Cut the pastry into squares or rectangles, approximately 4x4 inches.
In a mixing bowl, combine cream cheese, sugar, vanilla extract, and half of the blueberries. Mix until smooth.
Place about a tablespoon of the cream cheese mixture in the center of each pastry square. Top with a few remaining blueberries.
Fold the pastry over to seal and crimp the edges with a fork.
Brush the tops with the beaten egg for a golden finish.
Bake on a parchment-lined baking sheet for 15-20 minutes until puffed and golden brown.
Allow to cool slightly and dust with powdered sugar before serving if desired.
