Instructions
1. Preheat your oven to 350°F (175°C).
2. Grease a 9x13-inch baking dish with butter or cooking spray.
3. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Add butter and vanilla, and mix until crumbly. Press two-thirds into the bottom of the baking dish.
4. In another bowl, combine blackberries, cornstarch, lemon juice, and a tablespoon of sugar. Toss to coat.
5. Spread the blackberry filling over the crust.
6. Sprinkle the remaining crumble mixture over the filling.
7. Bake for 35-40 minutes until golden and bubbly.
8. Cool for 20 minutes, then lift out and cool completely before cutting into squares.
9. Serve warm or chilled, optionally with ice cream or whipped cream.
Notes
These bars can be made ahead of time and stored in an airtight container. They are also delicious served with a scoop of vanilla ice cream or a drizzle of berry sauce.
