  • 1 cup Biscoff cookie crumbs Approximately 200g, can be made by crushing Biscoff cookies.
  • 1/2 cup cream cheese Approximately 120g, softened.
  • 1/4 cup powdered sugar Approximately 30g.
  • 1/2 teaspoon vanilla extract
  • 8 ounces semi-sweet chocolate chips Approximately 225g.
  • to taste optional toppings e.g., crushed Biscoff cookies, cocoa powder, or sprinkles.

Instructions
 

  • Prepare the Biscoff cookie crumbs by crushing the cookies in a food processor or a zip-top bag.
  • In a mixing bowl, combine the cookie crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined.
  • Chill the filling in the refrigerator for about 30 minutes.
  • Roll the chilled filling into balls, about one inch in diameter, and place them on a parchment-lined baking sheet.
  • Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  • Dip each truffle into the melted chocolate, ensuring it is fully coated, and place back on the parchment-lined sheet.
  • While the chocolate is still wet, add your choice of toppings.
  • Chill the truffles again for at least 30 minutes to allow the chocolate to set.
  • Serve and enjoy your Biscoff Truffles!

Notes

Biscoff Truffles can be made ahead of time and stored in an airtight container in the refrigerator for up to a week.
