Instructions
Prepare the Biscoff cookie crumbs by crushing the cookies in a food processor or a zip-top bag.
In a mixing bowl, combine the cookie crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined.
Chill the filling in the refrigerator for about 30 minutes.
Roll the chilled filling into balls, about one inch in diameter, and place them on a parchment-lined baking sheet.
Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Dip each truffle into the melted chocolate, ensuring it is fully coated, and place back on the parchment-lined sheet.
While the chocolate is still wet, add your choice of toppings.
Chill the truffles again for at least 30 minutes to allow the chocolate to set.
