Ingredients
  

Meat

  • 3 pounds beef chuck roast, cut into large chunks Ideal for slow cooking, becoming tender and flavorful.

Dried Chilies

  • 6 pieces dried guajillo chilies Provides mild heat and deep red color.
  • 3 pieces dried ancho chilies Sweet and fruity, balances the spices.

Aromatics

  • 1 medium onion, quartered Enhances overall flavor profile.
  • 4 cloves garlic, minced Infuses meat with aromatic flavor.

Spices

  • 1 tablespoon ground cumin Adds earthy warmth.
  • 1 tablespoon dried oregano Brings a fragrant quality.
  • 1 teaspoon black pepper Adds subtle kick.
  • 1 teaspoon salt Essential for seasoning.

Broth

  • 4 cups beef broth Forms the base of the consomé.
  • 2 pieces bay leaves Imparts aromatic quality.

Tortillas

  • 10 pieces corn tortillas Ideal for wrapping the meat.

Garnishes

  • 1 bunch fresh cilantro, chopped Adds freshness and color.
  • 1 piece lime, cut into wedges Brightens flavors.
  • 1 cup diced onion Provides crunch and flavor.

Instructions
 

  • 1. Prepare the dried chilies by removing stems and seeds. Boil in water for 15 minutes until soft, then drain and blend.
  • 2. Add onion, garlic, cumin, oregano, black pepper, and salt to the blender with chilies. Blend with a cup of beef broth until smooth.
  • 3. Combine beef chunks with chili paste in a bowl, cover, and refrigerate for at least 2 hours or overnight.
  • 4. Preheat oven to 325°F (160°C). Transfer marinated meat to a Dutch oven, add remaining broth and bay leaves.
  • 5. Cover tightly and cook in the oven for 3-4 hours until meat is fork-tender. Alternatively, cook on stovetop over low heat.
  • 6. Remove meat, strain broth, and reserve for dipping. Shred beef using two forks.
  • 7. Heat a skillet over medium heat. Place a tortilla in the skillet, add shredded beef, fold, and cook until golden and crispy.
  • 8. Repeat with remaining tortillas and filling. Serve hot, garnished with cilantro and diced onion, with consomé for dipping.

Notes

For variations, consider using different meats, adjusting spice levels, or adding cheese for a cheesy twist.
