Instructions
1. Heat olive oil in a large skillet over medium heat. Add onion, carrot, and celery. Sauté for 5-7 minutes until softened.
2. Add minced garlic and cook for 1-2 minutes, stirring frequently.
3. Increase heat to medium-high, add ground beef, and cook for 7-10 minutes until browned.
4. Stir in tomato paste and cook for 2 minutes.
5. Add crushed tomatoes and beef broth or water. Stir to combine.
6. Add oregano, basil, salt, pepper, and bay leaf. Bring to a simmer.
7. Reduce heat to low, cover partially, and simmer for at least 30 minutes.
8. Cook spaghetti according to package instructions until al dente. Drain and reserve 1/2 cup pasta water.
9. Adjust seasoning of the sauce as needed. If too thick, add reserved pasta water.
10. Serve spaghetti topped with Bolognese sauce, garnished with parsley and Parmesan cheese if desired.
Notes
For variations, consider mixing ground meats, adding more vegetables, or using lentils as a meat substitute.
