Instructions
 

  • Prepare the chicken by shredding it into bite-sized pieces.
  • Mix the shredded chicken with BBQ sauce in a medium bowl until well-coated.
  • Cook the brown rice or quinoa according to package instructions.
  • Dice the red bell pepper and slice the avocado while the rice is cooking.
  • Assemble the bowl by layering the cooked rice or quinoa at the bottom.
  • Add a generous scoop of the BBQ chicken mixture on top of the rice.
  • Spoon the cottage cheese over the chicken.
  • Top with corn, diced bell pepper, sliced avocado, and chopped green onions.
  • Garnish with fresh cilantro or parsley and serve immediately.
