Instructions
 

  • Start by preparing the crust. In a food processor, crush the digestive biscuits until they resemble fine crumbs. Transfer the crumbs to a mixing bowl.
  • Add the melted unsalted butter to the crushed biscuits and mix until the mixture resembles wet sand.
  • Press the biscuit mixture firmly into the bottom and up the sides of a 9-inch pie dish. Chill the crust in the refrigerator for about 30 minutes to set.
  • While the crust is chilling, prepare the toffee filling. In a saucepan, place the can of sweetened condensed milk over low heat. Allow it to simmer gently for about 1 to 1.5 hours, stirring occasionally.
  • Once the toffee is ready, remove it from the heat and let it cool slightly. Pour the toffee into the chilled biscuit crust, spreading it evenly across the base.
  • Slice the ripe bananas and layer them on top of the toffee.
  • Next, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until the cream is thick.
  • Spread the whipped cream over the bananas, ensuring an even layer that covers them completely.
  • For an optional garnish, sprinkle grated chocolate or cocoa powder on top and add a few extra banana slices for decoration.
  • Refrigerate the Banoffee Pie for at least 2 hours before serving to allow the flavors to meld.
