Instructions
Preheat your oven to 400°F (200°C).
Lightly coat the bottom of a large baking dish with a tablespoon of olive oil.
Place the walleye fillets in the baking dish, drizzle with remaining olive oil, and season with salt and pepper.
In a small bowl, combine minced garlic and balsamic vinegar, then pour over the walleye and marinate for 15 minutes.
Rinse the cherry tomatoes and halve them, then scatter around the fillets in the baking dish.
Roast in the preheated oven for 20-25 minutes until the walleye is opaque and flakes easily.
Check for doneness by flaking the thickest part of the fillet; it should be white and opaque.
Remove from oven, garnish with fresh basil, and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to two days. Reheat gently in the oven.
