Ingredients
  

Fish

  • 1.5 pounds Walleye Fillets Skinless and boneless

Vegetables

  • 2 cups Cherry Tomatoes Ripe and firm

Sauces

  • 1/4 cup Balsamic Vinegar High-quality

Oils

  • 2 tablespoons Olive Oil Extra virgin

Spices

  • 3 cloves Garlic Minced

Herbs

  • 1 handful Fresh Basil Roughly chopped, for garnish

Seasonings

  • Salt To taste
  • Black Pepper Freshly ground, to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Lightly coat the bottom of a large baking dish with a tablespoon of olive oil.
  • Place the walleye fillets in the baking dish, drizzle with remaining olive oil, and season with salt and pepper.
  • In a small bowl, combine minced garlic and balsamic vinegar, then pour over the walleye and marinate for 15 minutes.
  • Rinse the cherry tomatoes and halve them, then scatter around the fillets in the baking dish.
  • Roast in the preheated oven for 20-25 minutes until the walleye is opaque and flakes easily.
  • Check for doneness by flaking the thickest part of the fillet; it should be white and opaque.
  • Remove from oven, garnish with fresh basil, and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to two days. Reheat gently in the oven.
