  • 4 pieces Salmon fillets (6 ounces each) Fresh, high-quality salmon is essential for this recipe.
  • 2 medium Ripe avocados Choose avocados that yield slightly to gentle pressure.
  • 4 ounces Feta cheese Crumbled feta adds a tangy flavor.
  • 2 tablespoons Olive oil Extra virgin olive oil is recommended.
  • 2 tablespoons Fresh lemon juice Adds brightness and acidity.
  • 2 cloves Garlic, minced Adds depth and aroma.
  • 2 tablespoons Fresh parsley, chopped Adds a burst of color.

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Lightly grease a baking dish with olive oil.
  • Place the salmon fillets in the baking dish, skin side down. Drizzle olive oil and lemon juice over each fillet. Sprinkle minced garlic, salt, and pepper on top.
  • Bake the salmon for about 15-20 minutes, or until it flakes easily with a fork.
  • While the salmon is baking, mash the avocados in a bowl and mix with crumbled feta, chopped parsley, and a drizzle of olive oil.
  • Once the salmon is cooked, spoon the avocado and feta mixture over each fillet and return to the oven for an additional 5 minutes.
  • Garnish with extra parsley and a wedge of lemon before serving.
