Instructions
Preheat your oven to 350°F (175°C). Prepare a doughnut pan by lightly greasing it.
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In another bowl, beat the eggs and mix in the milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and fold until just combined.
Transfer the batter into a piping bag and fill each doughnut cavity about two-thirds full.
Bake for 10-12 minutes until golden brown. Let cool for 5 minutes before transferring to a wire rack.
Prepare the cheesecake filling by beating the cream cheese until smooth, then add powdered sugar, heavy cream, vanilla, and Bailey's.
Once the doughnuts are cool, create a hole in each and inject the cheesecake filling.
For the glaze, melt chocolate chips and coconut oil in a microwave-safe bowl.
Dip the tops of the doughnuts in the glaze and sprinkle with graham cracker crumbs.
Allow the glaze to set for 15-20 minutes before serving.
Serve fresh and enjoy!
