Ingredients
  

For the Doughnuts

For the Chocolate Glaze

  • 1/4 cup graham cracker crumbs Mimics cheesecake crust.

Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare a doughnut pan by lightly greasing it.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • In another bowl, beat the eggs and mix in the milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and fold until just combined.
  • Transfer the batter into a piping bag and fill each doughnut cavity about two-thirds full.
  • Bake for 10-12 minutes until golden brown. Let cool for 5 minutes before transferring to a wire rack.
  • Prepare the cheesecake filling by beating the cream cheese until smooth, then add powdered sugar, heavy cream, vanilla, and Bailey's.
  • Once the doughnuts are cool, create a hole in each and inject the cheesecake filling.
  • For the glaze, melt chocolate chips and coconut oil in a microwave-safe bowl.
  • Dip the tops of the doughnuts in the glaze and sprinkle with graham cracker crumbs.
  • Allow the glaze to set for 15-20 minutes before serving.
  • Serve fresh and enjoy!

Notes

These doughnuts are best enjoyed fresh but can be stored in an airtight container for 1-2 days.
