Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly with cooking spray or butter.
  • In a large mixing bowl, combine the granulated sugar, all-purpose flour, baking powder, and salt. Whisk together until well blended.
  • Add the milk and melted butter to the dry mixture. Stir until combined, ensuring there are no lumps remaining.
  • In a separate bowl, beat the eggs lightly. Then add the vanilla extract, lemon juice, and lemon zest. Mix until well incorporated.
  • Pour the egg mixture into the flour and milk mixture, stirring gently until just combined. The batter will be somewhat thin.
  • Evenly distribute the batter into the prepared muffin tin, filling each cup about halfway full.
  • Bake for approximately 25-30 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  • Allow the pies to cool in the tin for about 10 minutes, then gently run a knife around the edges to help release them.
  • Transfer the pies to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
