Instructions
Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly with cooking spray or butter.
In a large mixing bowl, combine the granulated sugar, all-purpose flour, baking powder, and salt. Whisk together until well blended.
Add the milk and melted butter to the dry mixture. Stir until combined, ensuring there are no lumps remaining.
In a separate bowl, beat the eggs lightly. Then add the vanilla extract, lemon juice, and lemon zest. Mix until well incorporated.
Pour the egg mixture into the flour and milk mixture, stirring gently until just combined. The batter will be somewhat thin.
Evenly distribute the batter into the prepared muffin tin, filling each cup about halfway full.
Bake for approximately 25-30 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
Allow the pies to cool in the tin for about 10 minutes, then gently run a knife around the edges to help release them.
Transfer the pies to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
