Instructions
 

  • Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  • Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, mixing on low speed until just combined.
  • Fold in the shredded coconut and chocolate chips until evenly distributed.
  • Spread the cookie dough evenly into the prepared baking pan and press down to ensure even distribution.
  • Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  • While the cookie base is baking, melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  • Once the cookie base is done, sprinkle the whole almonds over the top, followed by the melted chocolate, spreading it evenly.
  • Let the bars cool at room temperature for about 30 minutes, then refrigerate for at least 1 hour to set.
  • Remove from the pan using the parchment paper and cut into squares or rectangles.
