Instructions
Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, mixing on low speed until just combined.
Fold in the shredded coconut and chocolate chips until evenly distributed.
Spread the cookie dough evenly into the prepared baking pan and press down to ensure even distribution.
Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
While the cookie base is baking, melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Once the cookie base is done, sprinkle the whole almonds over the top, followed by the melted chocolate, spreading it evenly.
Let the bars cool at room temperature for about 30 minutes, then refrigerate for at least 1 hour to set.
Remove from the pan using the parchment paper and cut into squares or rectangles.
