Instructions
In a large mixing bowl, combine the yogurt, tikka masala spice blend, lemon juice, garlic powder, ginger powder, salt, and pepper. Mix well until smooth.
Cut the chicken thighs into bite-sized pieces and add to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes.
Chop the bell peppers, onion, and zucchini. Toss with olive oil, salt, and pepper in a separate bowl.
Preheat the air fryer to 200°C (390°F) for about 5 minutes.
Place the marinated chicken in the air fryer basket and scatter the vegetables around it.
Air fry at 200°C (390°F) for 15-20 minutes, shaking the basket halfway through.
Check that the chicken reaches an internal temperature of 75°C (165°F) and is golden brown. Cook longer if necessary.
Remove from the air fryer, garnish with cilantro, and serve immediately.
