Ingredients
  

Chicken

  • 500 g boneless chicken thighs Ideal for their rich flavor and juicy texture.

Marinade

  • 1 tablespoon lemon juice Brightens the marinade.
  • 1 teaspoon garlic powder Enhances overall flavor.
  • 1 teaspoon ginger powder Adds a zesty kick.

Seasoning

Vegetables

  • 1 red bell pepper, cut into chunks Adds sweetness and color.

Instructions
 

  • In a large mixing bowl, combine the yogurt, tikka masala spice blend, lemon juice, garlic powder, ginger powder, salt, and pepper. Mix well until smooth.
  • Cut the chicken thighs into bite-sized pieces and add to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes.
  • Chop the bell peppers, onion, and zucchini. Toss with olive oil, salt, and pepper in a separate bowl.
  • Preheat the air fryer to 200°C (390°F) for about 5 minutes.
  • Place the marinated chicken in the air fryer basket and scatter the vegetables around it.
  • Air fry at 200°C (390°F) for 15-20 minutes, shaking the basket halfway through.
  • Check that the chicken reaches an internal temperature of 75°C (165°F) and is golden brown. Cook longer if necessary.
  • Remove from the air fryer, garnish with cilantro, and serve immediately.

Notes

This dish can be served with naan, rice, or a fresh salad for a complete meal.
