Instructions
 

  • Prepare your ingredients: chop the beef, finely chop the onion, mince the garlic, and grate the ginger.
  • In a large pot, heat oil over medium-high heat. Sear the beef in batches until browned, about 5-7 minutes.
  • Remove the beef and sauté the onion for 3-4 minutes until translucent.
  • Add garlic and ginger, stirring for another minute until fragrant.
  • Return beef to the pot, add tomatoes, and stir for 2-3 minutes.
  • Pour in beef broth, add chili powder, salt, and pepper. Bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender.
  • Stir in peanut butter until fully incorporated, thickening the stew.
  • Add carrots and potatoes, cover, and simmer for an additional 30-40 minutes.
  • Adjust seasoning as needed, then serve garnished with fresh cilantro.
